Brinner - the beautiful combination of breakfast and dinner. A personal favorite of mine when I am feeling lazy about cooking dinner.
Here are two of my favorites.
Egg Scramble
I start with onions or shallots, saute in a little bit of olive oil, add some vegetables mushrooms, spinach (if using spinach with other veggies, cook other veggies first since spinach cooks quickly), bell peppers, zucchini, etc; saute with onions until tender. In bowl whisk eggs (or egg whites if you are feeling "healthy") add to vegetable mix. Cook until no longer runny. See? Simple. The hardest part is washing and cutting the vegetables. In the picture shown I had a slice of ham that I chopped, and added to the egg mixture while the eggs were still cooking.
Apple Pancakes and Poached Eggs
This was concocted to use some more apples. I took my regular pancake recipe and added some finely chopped apples to the mix (oh I should have added walnuts, oh well, next time). I washed, peeled, cored, sliced some apples into a pan and cooked until warm.
For the poached eggs I use Alton Brown's method.
Boil about 2" of salted water in a pan. Once boiling add about a tbsp of white wine vinegar. Crack eggs into little dishes. Reduce heat but keep it close to boiling (just to reduce the turbulence) and quickly but gently pour the eggs into the water. Dipping the edge of the dish into the water.
Cover, remove from heat and let sit for 3-4 mins. It is important to keep the water as close to boiling as possible when pouring in the eggs, otherwise you will need to increase the cook time.
When the time is up, remove with a slotted spoon. mmmm mmmm.
